Although I want my kids to eat homemade food- I DO NOT want to spend my life in the kitchen, so I try to make it easy for myself by making things in bulk when I have the time, and freezing them for later. These Sourdough Pizzas are perfect for having on hand when you need something quick to pull out and make, and bonus- budget friendly!
Ingredients
3 cups flour
1 cup sourdough discard (or 1/2 cup active)
3/4 cup warm water
1 teaspoon salt
6 tablespoons butter melted
Instructions
1. Mix all ingredients together. I finish mixing with my hands to make 1. Mix all ingredients together. I finish mixing with my hands to make sure it's all mixed into a ball.
2. Let rest at room temperature for 2-4 hours, or you can even let it sit for up to 24 hours for a long fermentation.
3. Heat up a frying pan on medium heat (I use cast iron).
4. While the pan is heating, cut the ball in half. Cut each half in half (making 4 pieces). Cut each of those pieces into 3. This should leave you with 12 pieces.
5. Take a piece, roll it into a ball, and then you want to make it into a pancake. I use a cast iron tortilla press. I just put the ball in it, squish it, and it's the perfect thickness and size for a mini pizza. You can use a rolling pin, but don't make it too thin or it becomes a tortilla, which can still work, the pizza will just be more floppy.
6. Once you have your pancake, put it on your preheated pan and toast for roughly 30 sec each side (or until the dough loses the raw look and looks cooked). Don't overcook, or it will be crispy (which you can purposely do at some point if you want something for a dip)
7.Repeat steps 5-6 for all the dough, and then once they cool, place them in a large zip-lock with parchment paper in between. Place them in the freezer and pull them out when you want to make homemade pizza. Just add sauce, cheese, and any toppings and place them on a baking sheet in the oven at 375 F until the cheese is melted and they are toasty.
